Roasted Butternut Squash With Cherries and Feta

- 1 large butternut squash, cut into ½ inch cubes
- 1 tbsp. honey mustard
- 2 tbsp. olive oil
- 1/4 tsp. pepper
- 1/2 tsp. sea salt
- 1/2 tsp. garlic powder
- Dash of cinnamon
- 5 oz. dried cherries
- 4 oz. feta cheese
- 2 tbsp. honey
Instructions:
Preheat the oven to 400 degrees. Peel squash, cut in half lengthwise, and cut into ½ inch cubes. Place squash into a large plastic bag and add olive oil, honey mustard, and spices, close and shake the bag until squash is evenly coated. Spread squash evenly onto a parchment-lined baking sheet and bake for 30 minutes. Remove from the oven, transfer to a serving dish, and add cherries, feta cheese, and honey, tossing lightly to coat. Serve immediately and enjoy!
