Mini Turkey Cranberry Quiche

Yields 4 mini quiche

Ingredients:

  • ½ small onion, diced
  • 1 small organic gala apple, chopped
  • ¼ cup dried cranberries
  • 1 cup diced small red potatoes
  • 1 cup organic spinach leaves
  • 1 cup shredded gouda cheese
  • 1 cup shredded turkey breast
  • 8 free-range eggs
  • 2 tbsp. heavy whipping cream
  • Himalayan sea salt and black pepper to taste

Instructions:

Preheat oven to 350 degrees. Place apples, onion, turkey, potatoes, spinach, and cranberries evenly into 4 mini oven-safe quiche dishes.  Layer the gouda cheese onto each dish. Whisk together eggs and heavy cream in a separate bowl, and pour evenly into each dish. Sprinkle with salt and pepper and bake for 20-25 minutes or until eggs are set.
