Mediterranean White Bean Salad

Ingredients:
- 1 15-oz. can of great northern beans
- 1/4 of a red onion, chopped
- 1/4 cup kalamata olives, sliced
- 1/4 cup full-fat feta OR goat cheese crumbles (optional)
- 1 cup organic cherry tomatoes, sliced
- 10 oz. jar artichoke hearts in water, drained and sliced
- 2 tbsp. olive oil
- 1/4 cup white vinegar
- 1 tbsp. Italian seasoning
- 1 tsp. garlic powder
- 1/4 tsp. Himalayan sea salt
- 1/4 tsp. black pepper
Directions:
Combine all ingredients in a large mixing bowl, stirring well to combine. Cover in an air-tight container and refrigerate for at least 2 hours before serving.
