How to Make a Cloud Egg

Ingredients:
- 2 organic free-range eggs, separated yolks and whites
- 2 green onions, sliced thin
- Himalayan sea salt and pepper to taste
Directions:
Preheat the oven to 400 degrees. Separate the egg whites from the yolks, saving the yolks aside. Whisk egg whites until they forms white foamy peaks. Cover a baking sheet with parchment paper. Place egg white on top of parchment paper, drawing a circular shape. Bake for 3 minutes, remove from the oven, and place yolk in the middle of the egg white "cloud". Bake for another 3 minutes, remove from heat and season with salt, pepper and green onion. Enjoy by itself or on top of a piece of toast with mashed avocado!
